Mellow is a single origin from Sítio Toca da Jaguara, Minas Gerais, Brazil. Roasted for filter and made for easy moments. Smooth, balanced and comforting, it brings a sense of warmth that feels a little like stepping out of the cold and into the sun, even if just for a moment.

There’s a soft fruitiness that keeps things lively, paired with rich, chocolatey comfort that lingers and makes you want to stay a bit longer.

MELLOW Winter Filter Roast

Grown in Baoshan, in western Yunnan, this coffee thrives in a dry, hot valley climate with less than 2,000mm of annual rainfall. The low rainfall concentrates the fruit’s natural sugars, giving Baoshan coffees a higher sugar content than many other regions. Cultivated at over 1,750 MASL, the high altitude brings significant day-night temperature swings and an extended growth cycle which enhances photosynthesis and respiration, and in turn, allows the cherries to accumulate more complex sugars and acids. 

Hand-picked cherries are placed in sterilised stainless-steel buckets for vacuum anaerobic fermentation at 26°C for 168 hours. In such an environment, the natural yeast and lactic acid bacteria convert the fruit’s sugars into lactic and tartaric acids. While the lactic acid enhances the overall sweetness, the tartaric acid introduces a distinct flavour that is not typically found in the Catimor variety.

The post-fermentation process then begins with sun-drying the fermented cherries for seven days. This crucial step rapidly reduces the water content, halts fermentation, and prevents mold development. Following this, the cherries are moved to the shade for 30 days. They then undergo a 90-day rest period, still in parchment and the shade. This meticulous drying regimen ensures uniform moisture levels and stability, ultimately yielding a coffee that presents a clean, balanced cup with expressive fruit and layered sweetness.

On the volcanic slopes of Mount Manglayang, Mr. Ade has built a reputation for producing some of the cleanest and most consistent natural coffees in West Java. Working with a small circle of like-minded farmers, he focuses on precision and careful drying to bring out a bright, refined expression of the region.

For this natural lot, cherries undergo strict ripeness selection at the farm, followed by floating and hand-sorting to ensure only clean cherries move forward. Ade then spreads the cherries directly onto raised beds in thin layers,and turns them frequently throughout the day to encourage even drying, which is essential in Manglayang’s humid microclimate. Using covered beds and tightly controlled airflow, he creates a clean, stable environment that prevents mold and off-notes while allowing the fruit to dry gradually.

The result is a natural coffee that avoids the heavy or overly fermented character often associated with Indonesian processing. Instead, the cup is clean, sweet, and balanced, with fruit tones like plum and cherry, gentle honeyed sweetness, and light floral edges. The Sigararutang varietal and volcanic soil further contribute to its bright and refined profile.

Up in the cool highlands of Rancabali, coffee farmer Mr. Handy is known for his commitment to experimentation and precision in post-harvest processing. He collaborates closely with smallholder farmers around the region to oversee the entire coffee journey, from cherry selection to drying. His approach is centred on elevating the clarity and complexity of West Javan coffees, which naturally benefit from the region’s altitude and climate.

For this Lactic Natural lot, only perfectly ripe cherries are hand-picked and placed into sealed anaerobic tanks. In this controlled, oxygen-free environment, a slow stable fermentation unfolds over about 168 hours. Handy does not introduce any external cultures but solely relies on the native microflora present on the cherries and in the surrounding environment. This approach allows the sugars and acids in the fruit to mature gradually, resulting in deeper sweetness and structured acidity.

Once fermentation is complete, the cherries are transferred to raised drying beds, where they dry slowly and evenly. Given the delicate balance needed at this altitude, Handy carefully manages airflow and movement to maintain a clean profile without tipping into over-fermentation.

The Bombora was actually our very first blend, and oh my, a lot happened since. No one within our company quite remembers it's date of creation, but let’s just say it got forged in fire and a spinning roaster drum almost a decade ago.

Our Bombora blend has been a house blend staple for café’s across Amsterdam and the world, including our very own. It was our first creation, designed as a strong morning workhorse coffee that was sweeter than the status quo.

The secret to its success is its balance of full hazelnut and chocolate tones, tempered with caramel sweetness and a dash of dark cherry. To create this sensory experience, we roast a blend Guatemalan and Brazilian beans, with maximum chocolate sweetness as the goal.

Try it with milk for a nutty chocolate latte, or as a sweet syrupy espresso for that dark cherry aftertaste.

Our decaf coffee got stripped from the jitters entirely chemically-free, by using a method called Swiss Water Processed®.

Fresh Water Decaf takes its name from Freshwater, Australia — a beach town that inspired both the vibe and the smooth, easygoing profile of this blend.

Our decaf coffee is stripped of caffeine using a natural, sugarcane based process, known for keeping the coffee’s flavor sweet, smooth, and beautifully intact.

First, the green (unroasted) beans are gently steamed to open their pores. Then, they’re washed in ethyl acetate, a naturally occurring compound derived from fermented sugarcane. This compound bonds with the caffeine and draws it out, without stripping away the sugars and oils that give coffee its body and flavor.

After that, the beans are steamed again to remove any remaining traces of the compound, and then dried and rested before roasting.

The result? A bold, balanced cup, chemical-free, full of character, and entirely buzz-free.

We call it decaf, but you might just call it delicious!

In the same way that Rodney Mullen and Tony Hawk pushed skating beyond what it was and into what it became, the Nosegrind blend pushes the envelope of traditional espresso right off the rail. 

The two natural coffees work together to perform their duet, one holding down the body, the other hitting the high notes, all while being careful not to clash in the middle of the halfpipe. 

It’s sweet and fruity when served black, with a delicate balance of bright and smooth notes. With milk it transforms into a smooth chocolate strawberry milkshake.

Cafec Abaca Paper Filter

Marysabel grew up in the Honduran region Marcala and stems from a long generation of coffee producers, from which she has harnessed her passion for nature and knowledge of the Honduran terroir.
 
Moises is of Guatemalan origin. He worked as an accountant for a coffee exporter, however while spending his time at the cupping table he jumped wholeheartedly into specialty coffee. In the early 90’s, he was sent by his company as production manager to Honduras where he met Marysabel and was inspired to stay. In 1996 Moises and Marysabel married. Since then, they have two sons and run the farm as partners.

Every year, the family optimizes the processing methods at their mill in Chinacla, while paying great attention to environmental protection and sustainability. Among other things, Moises has set up a modern coffee eco-pulper to save as much water as possible. For instance, whereas de-pulping a 46 kg batch of coffee cherries would require 120 liters, he now uses 40 liters. The water is recirculated and cleaned after each use.

Moises has his own variety garden, which is affectionately called by Marysabel “Moises’ Garden of Eden”. Here he grows ancient, nearly forgotten coffee varieties in self-built greenhouses, does experiments and researches the effect and influence of temperature, water, wind, minerals and soil on his plants.

We're thrilled to have Moises and Marysabel's gesha lot land in our roastery. Expect notes of raspberry, cacao nibs and white grapes with a wonderful jasmin aroma.

Honduras Gesha 100g

We start with the highest quality coffee, filtered water and cold brew it for 18 hours in stainless steel tanks, then use a filtration process to procure the end result: a smooth and full-bodied brew with low-acidity and a chocolate finish.

Our Nitro Oatly Flat White is prepared with the Zimzala blend and mixed with Oatly oat milk and nitrogen. It might sound complicated but if you like (vegan) milkshakes and 'chocomel' this is totally something for you.

Cuatro Caminos' Loma de Los Cedros is an 7.2 hectare farm at an average altitude of 1.550 meters above sea level and has around 36.150 trees. Formerly known as Finca Damarli, named after the previous owner’s daughter, is a beautiful farm located near Volcancito.
 
The farm is situated in the shadow of the famous Volcan Baru volcano, the source of the rich volcanic soil that makes Boquete coffee so desirable. Added to the ample supply of water and natural shade, all the ingredients are there to make the coffee from Loma de Los Cedros some of the best in town.

Geisha from Cuatro Caminos' Loma de Los Cedros has become one of the most elegant and beautiful geisha profiles we have had so far, and in 2019, we started the replanting process with this in-demand varietal, planting it among old Catuai trees.

Our [Lost Origin Lab] journey of experimentation has been influenced by our knowledge in beer making. Hence, several of our batches were fermented using microbe strains commonly used in the beer industry. However, we had a compromise to step into the unknown. During our first processing season, we had the opportunity to work with Chr. Hansen, which is a global company dedicated to bioscience. Through this collaboration we were granted access to a few strains we had not had the chance to work with before, among which were L. thermotolerans and Pichia kluyveri.

L. thermotolerans is a yeast species that is commonly found in grapes, plants and soil. As such, it is extensively used in wine fermentations. In terms of beer production,  L. thermotolerans is a species whose popularity has been increasing in recent years as an alternative strain for the production of sour beer. However, it is still not considered to be the main strain for the production of sour beer styles, and is currently not used in our brewery facility.

Pichia kluyveri is a microorganism that has been widely studied due to its ability to produce high volatile compound concentration as a result of its metabolism. Similar to L. thermotolerans, it is a species that is widely used in wine making.

In order to assess the impact of microbe metabolism as an isolated variable, and get familiarized with these microbes, we designed a few trial series. The first trial was composed of three lots, all of which used geisha cherries harvested from Don Benjie’s estate. The purpose of this first experiment was to compare how the cup profile was altered through varying microbe metabolism. For this reason, these batches were held under the same temperature, and were inoculated with Pichia kluyveri, L. plantarum, and a mixed starter culture of both microbes, correspondingly.

This particular lot has very clear notes of Jasmine, and a characteristic phosphoric acidity of Panamanian geisha. It has a good body with a sugarcane sweetness.

Nucleus Paragon Espresso

Zimzala's base of Brazil gives it a touch of hazelnut and body but then Peru comes in, singing of stone fruit. This combo elevates the coffee into a clean and crisp cup.

We like to think of our Zimzala coffee as the middle child of the blend family: brighter than it's older brother Bombora, more full and less fruity than it's younger sibling, Nosegrind.

It’s a modern take on a classic, a traditional full espresso blend with more citrus and sweetness than most. It will please all but has something extra for those with discerning tastebuds.. and isn’t that all of us anyway?

The powerful apricot zing of Zimzala is courtesy of a high-altitude Colombian coffee blended with a more rounded Brazilian bean. Combined they give a syrupy-sweet, yet well balanced shot, perfect for a morning-espresso or for a light yet complex milk-based drink.
